Baked Salmon with Pea Mash & Roasted Fennel

We absolutely love Sophie's baked salmon recipe, it is just to die for! Pair this perfect dish with.. 




1 teaspoon coconut oil

1 leek

1/4 cup water

2 cups frozen petit pois

1 tablespoon chopped parsley

1 tablespoon olive oil

1 lemon

1 fennel

himalayan salt and black pepper

2 salmon fillets



Chop the fennel, season with salt, pepper and olive oil and roast in a preheated oven at 180 degrees for 25 minutes.

Then, make the pea mash by frying the leek in a pan with the coconut oil a medium heat until soft and tender – about 5 minutes.

Add a pinch of salt and pepper, the parsley, the petit pois, juice of half the lemon and the water and cook for a further 5 minutes until the peas defrost.

Place the pea mix in to a blender and blend for 30 seconds. Keep warm in a dish whilst you get the salmon ready!

Simply place the fillets on a baking dish, season with salt, pepper and the juice of the other half of the lemon. Place in the oven at 180 degrees for 12 minutes.

Plate up with a good helping of the pea mash, the fennel, season with a little more black pepper if you like and dig in!
